Ingredients
3 each Fresh carrots (peeled into ribbons using a vegetable peeler)
2 each Green zucchini squash (peeled into ribbons using a vegetable peeler)
2 each Golden zucchini or yellow squash (peeled into ribbons using a vegetable peeler)
1/4 – 1/2 of an Purple or red onion (thin julienne slices)
4 0z Feta cheese, crumbled
4 oz Dried sweetened cranberries
4 oz Raisins
6 oz. Walnuts
2 oz. Butter, melted
VINAIGRETTE
• 6 tbsp olive oil
• 3 tbsp lemon juice or apple cider vinegar
• 3 tsp honey or maple syrup (optional)
• Salt and black pepper to taste
• Optional add-ins: fresh herbs (parsley, dill, or mint), toasted nuts or seeds, feta cheese, raisins or dried cranberries
Instructions
1. Start by preheating oven to 375 degrees. Rinse all vegetables. Peel outer skin of fresh carrots and discard. Peel carrots, green and golden zucchinis into long thin ribbons using a vegetable peeler. Add julienne red onion. This creates an appealing texture and makes the salad easier to enjoy.
2. In a large bowl, combine the olive oil, lemon juice (or apple cider vinegar), honey (if desired), salt, and pepper and desired herbs Whisk together until well blended.
3. Melt butter and add to a small bowl Add walnuts & toss until well coated. Pour onto cookie tray & place in oven for 15 minutes. Remove from oven and allow to cool.
4.. Add the carrot, squash ribbons & julienne red onions. to the bowl and toss gently to coat them in the dressing. Let the salad marinate for about 10 minutes to enhance the flavors.
5.. Mix in toasted walnuts, raisins & dried cranberries, top with crumbled feta cheese.. This step allows for customization while adding layers of taste.
